Homemade Valentine’s Meal For Your Honey

A wonderful pasta dish that brings together some of my honey’s favorite foods is sure to make him smile when it reaches the dinner table.

Shrimp & Mushroom Fettuccine Alfredo

What you need:
2 tablespoons butter
2 (4 oz cans) mushrooms, drained
1 teaspoon Italian seasoning
10 oz cooked shrimp
1/2 teaspoon garlic powder
1 package fettuccine noodles
What you need for Alfredo Sauce:
8 oz cream cheese, softened
1/2 cup butter
1 1/2 cup milk
1/2 cup parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
Salt & pepper (to taste)

Step 1: In a medium stock pot, slowly melt 8 oz cream cheese and ½ cup butter over medium heat.  Whisk it every so often while it melts so that it doesn’t stick to the bottom of the pan and burn.

Step 2: Once the cream cheese and butter melts, whisk in 1 ½ cups of milk.

Step 3: Next, mix in ½ cup of parmesan cheese; add in 1 teaspoon Italian seasoning and ½ teaspoon garlic powder.

Step 4: Whisk to combine. Bring to a low boil and then reduce to a simmer. The alfredo sauce will thicken as it simmers.

Step 5: While the alfredo sauce is simmering, start cooking the mushrooms and shrimp.

Step 6: In a medium skillet melt 2 tablespoons of butter.

Step 7: Add mushrooms.

Step 8: Add 1 teaspoon of Italian seasoning.

Step 9: Sauté until mushrooms are slightly browned and hot.

Step 10: Remove from pan and set aside.

Step 11: Melt 1 tablespoon of butter in the medium skillet. Add shrimp and ½ teaspoon garlic powder.

Step 12: Stir well and heat until shrimp is hot.

Step 13: Add heated shrimp and mushrooms to the alfredo sauce.

Step 14: Whisk to combine.

Step 15: Bring a large stock pot of salted water to a boil.  Add fettuccine noodles. Cook the noodles for 8 minutes (or until done). Drain and set aside until ready to use.

To plate this dish, pile a serving of pasta onto a plate and spoon the mushroom/shrimp alfredo on top.

Season with salt and pepper if desired.
