This coffee cake recipe has been in my family for years, made by one of my mom’s best friends, Shelia. Since then, we’ve made several twists on this delicious recipe, and I have to say this version of Cinnamon Streusel Coffee Cake is by far my favorite. Made with a few simple ingredients, make this a memorable part of your Mother’s Day brunch this year.
Mother’s Day is the one “holiday” that I am picky. The rest of the holidays I am all about what the kids love and what the hubby will eat, but on Mother’s Day, I couldn’t really care less if they like what we’re having or not.
There’s one thing though that we all love, and that is coffee cake. Seriously, it has been a staple in our home and family since I was a child. Every once in a while I get the gumption to add a twist or two to this recipe and try something new. This time it was streusel topping, thanks to the suggestion from my friend Allison who made it first!
Light, fluffy and moist, I never thought the original coffee cake could be better, but add a cinnamon streusel and a light dusting of powdered sugar, and you have the best pastry to start off Mother’s Day.

I love the month of May. Cinnamon Streusel Coffee Cake
Cinnamon Streusel Coffee Cake - A light & fluffy golden cake topped with a classic cinnamon, brown sugar streusel topping.

Calories: 507 kcal
- 1 box yellow cake mix + ingredients on back of box
Cinnamon Streusel Topping
- 1 cup cold salted butter
- 2 1/4 cup flour
- 1 tablespoon cinnamon
- 1 3/4 cup brown sugar
- 1 1/2 tablespoons vanilla
- optional powdered sugar dusting
1. Spray a 9x13” cake pan with non-stick cooking spray.
2. Prepare cake mix according to package directions.
3. Bake in oven for 15-20 minutes until center is just barely set.
4. Meanwhile, make your topping, in large bowl add all your ingredients, and with a hand mixer, mix together until combined and small crumbs form.
5. Remove cake from oven and sprinkle on the topping.
6. Place back in oven and continue baking for 10-15 minutes until browned.
7. Remove from oven and let cool slightly.
8. Cut and serve each slice with a dusting of powdered sugar.
